

Ichihaze Coffee Roasters
This month we welcome Ichihaze Coffee as our Roaster of the Month, and we could not be more excited to have them on board. Founded by Takumi Masaki, Ichihaze grew from a love of Melbourne’s cafe culture and a desire to create something of his own. After moving from Japan in 2014, Takumi went from instant coffee drinker to seasoned barista, eventually roasting at a shared space before building Ichihaze into a one-man roastery. Today he still juggles roasting, packing, and sourcing while pulling shots behind the machine at 279 café in North Melbourne.
Ichihaze is built on a simple idea — roast coffee that you actually want to drink every day. Takumi only sources clean washed and natural coffees, steering clear of heavily fermented or gimmicky processes. His aim is sweetness, clarity, and balance, the kind of coffees that work beautifully whether you are brewing a stovetop, French press, or a pour over. Expect approachable profiles like Brazil São Judas Tadeu natural or Ethiopian Bekele Gemeda washed, each chosen to showcase the best of its origin without overcomplicating things.
This September, our Do Good, Brew Good mission continues. A percentage of every Daily Drip sale from both the subscription and Goose will go directly to the RSPCA, supporting their tireless work protecting and caring for animals across Australia.
