This month we’re checking into Vacation Coffee, a Melbourne roaster built around the idea that really good coffee can feel like a small escape from the everyday.

Who They Are

Vacation Coffee began in 2016 when Jimmy Tjoeng and brothers Matt and Kael Sahely brought together their backgrounds in coffee, cafés and Melbourne hospitality.

They started roasting from a shared space in Cremorne before opening their first Vacation café on Exhibition Street in 2017. Small, colourful and tucked into the middle of the CBD, it gave Melbourne its first proper taste of the Vacation life.

One café soon turned into three.

Today you can find Vacation on Exhibition Street, tucked away in Cremorne and at their larger Richmond café, where coffee is joined by sandwiches, smoothies and batch brew on tap. Each space is a little different, but they all carry the same Vacation energy: bright, relaxed and a pretty good place to disappear from your day for a while.

It turns out Melbourne likes taking a Vacation. Their cafés have since been recognised among the World's 100 Best Coffee Shops in both 2025 and 2026.

Their Approach to Coffee

Behind the pastel colours and holiday state of mind is a team that takes what's in your cup very seriously.

Vacation has a soft spot for naturally processed coffees and plenty of sweetness. Espresso is roasted medium, filter a little lighter, with the aim of bringing out smooth, balanced and expressive flavours that are easy to enjoy.

Their range has something for wherever your coffee mood takes you. Familiar espresso blends sit alongside rotating single origins and limited microlots, so you can keep things comfortable or venture somewhere completely new.

That's what makes Vacation such a fun roaster for Daily Drip. There's plenty of knowledge and experience behind every bag, but none of the stuffiness that can sometimes come with specialty coffee.
